Cevapcici( Croatian Sausage)

Topic started on 12-10-2004 @ 04:31 PM by nathraq

My recipe for making a homeland favorite dish:

1lb. ground beef
1lb. ground pork
1lb. ground lamb
3 tbs minced onions
2 tbs garlic salt
1 tsp oregano
1 egg

In a large bowl, combine all ground meat, minced onions, garlic salt, oregano and egg. Mix together 2-3 minutes. Roll meat into small sausages, and place on large plate. Refrigerate 1-2 hours( this holds the form). On an indoor cooking grill, place sausages and cook at 300degF, until middles are done(about 20 minutes). You can also charcoal grill( TASTES BETTER). Serve over rice, and with red and yellow sliced bell peppers.

Should make 25-30 sausages.

Enjoy!

Cevapcici is a specialty for all former Yugo provinces.

Bosnia and Herzogivina were part of Croatia for hundreds of years, so there is really no difference. I call it Croatian, becuase that it was I am, and that is what we eat

Nathraq, sounds quite good.

Do you mean to roll the meat into link like sausages or flat like a hamburger patty?

I'm thinking grilled over charcoal it would make terrific hamburger type sandwiches.

I like to mix lean hamburger with about 20% sausage for grilling.

This sounds far better.

Many years ago I had Cevapcici sausage at a Croation bar in Cleveland. It was served to me with raw onions and bread.

make little sausages about the size of your thumb but a little longer.
think of a beef patty/burger patty, but in a thumb sized sausage.

chevapcici are cheap, and a bit more full flavoured compared to a regular ol sausage

This sounds good. It's very similar to Italian meatballs, except we just use ground beef (usually).
