Chevy Lovers

I love OLD SCHOOL CHEVY'S. I just wanted to hear from everyone else that are Chevy lovers what is the best motor that Chevy put out in it time? I have a few old school car 1956 Bel air, 1957 Bel air, and a 1963 nova. I grow up loving the 57 always wanting one. I finally got one and now fixing it up. Thought I would through this question out there. Thank you for your time.
