My favorite at the moment is 'Recepies From A Three Star Chef' by Gordon Ramsay.

It is quite ambitious, and presents the recipes - in full - from his 3 michelin starred restaurant in london (they are not diluted for the home cook).
You need time and perseverence for the recepies (and deep pockets for one or two of them.)
What I've found is that you can pick up a lot of the basics of very high level cooking, and run with them, taking elements (like a sauce or new
cooking method) from a recipe and using them in your own way.
The next book i'd like is The French Laundry by Thomas Keller. Has anyone got this book? What do you reckon to it?
