Only two games off the top of my head that I'd like to see redone:
FF7 (PS) - one of the best FF games for story line
Tekken Tag Tournament (PS2) - only rivalled by tekken 5 so far (still waiting to try 6)

Battlefield 1942 modification 'Desert Combat', needs to be relaunched as a whole new game based on a modern game engine - however, it needs to be
EXACTLY the same as the old one minus graphics.

I can't think of too many games that I would want "remade". The only two I ever wanted remade (Resident Evil and Metal Gear Solid) already have
been.
As for sequels, a new Eternal Darkness would be pretty awesome but I'm just happy to hear about the anouncement for Deus Ex 3.

Xenogears was probably the greatest story-oriented game ever created, period. It was due to 'Gears that most of my interest in various different
philosophies, technologies, and other such things came about. I can say honestly that I wouldn't be who I am today WITHOUT that game.
However, while some people are saying "Remake!", I'm saying how about they finish the darn thing like it should've been. With a graphics
update.
For anyone who never played it, go and find a copy if you can. The game graphics are dated (Playstation 1), and it has some amount of non-intuitive
gameplay... but nothing at all measures up to the story before or since.
As for other games I'd love to see revived/remade...
The Ultima series (Damn you EA for murdering Origin).
Quest for Glory.
Noctropolis (Perhaps with some sequels? Would be cool).
The entire Adventure Gaming Genre.
Legend of Zelda: A Link to the Past (The best Zelda game ever made).
Chronotrigger (And a proper sequel to it that doesn't suck like Chrono Cross did).
Secret of Mana.

I may be one of the few in the whole world to say this, but I would seriously love to see another Shenmue. I want to see what happens with the story!
Yu Suzuki left us hanging at the end of Shenmue 2! At least he could write the story into a book and let us read what happens to Ryo.
Also I am eagerly looking forward to another Deus Ex.

Unfortunately after X-COM Ufo Defense and Terror from the Deep, there are no other good X-COM or UFO games. As of right now, Take 2 owns the IP for
X-COM.
A kick-ass classic action game series, Crusader:
