Chicken Fajitas

These are great & quick. You can make many variations.

chopped chicken
chopped sweet red & green peppers
chopped jalapeno pepper
assorted spice
olive oil
spinach dip (pre-made)
raisins or currants
fajita wraps (plain, sun dried tomato or spinach flavor)

Stir fry chopped chicken in olive oil at med high heat with the spice added until chicken is browned on outside.

Lower heat to med low, add peppers. Cover until all ingredients are cooked. Add a little water if necessary to prevent burning.

Remove from heat when done. Spoon a little on a fajita wrap. Spoon some spinach dip & raisins/currants on top of chicken mixture. Fold fajita wrap. Continue making more wraps until all the chicken mixture is used up.

Sounds good... I'm usually lazy, and go with a fajita mix, and doctor it up a little, while stir-frying the chicken, steak, and veggies....

I make fajitas often, but I have not tried some of the ingrediants that you have listed. They sound great!!
